Sourced from sustainable, seasonal fishing in the cold waters of the English Channel, and harvested outside the reproduction period, these “white” scallops (without coral) are individually frozen to preserve the original qualities of the fresh product. Preparation tips

PAN-FRIED PREPARATION: Sauté the frozen scallops directly in a greased pan over medium heat, previously seasoned with salt, for 2 minutes. Add a knob of butter, baste, then turn and allow to caramelize for another 2 minutes, continuing to baste. Remove from the pan when the scallops are firm yet slightly springy, and season to taste.

The scallops can also be cooked thawed, following the same method as for fresh scallops.
